Margie Hurd is deliveringSand Sole this week. I must admit, I don't know much about the fish. But, Margie does - and we sure know that fisherman (who's a local legend) Travis Evans knows a thing or two or three-hundred about it. Margie's newsletter says that: "Travis Evans is 88 years old and began commercial fishing during World War II when the public and troops needed fresh fish. Today Travis owns the fishing vessels Lucy L. and Gardena.    Travis and his wife Katherine have been married 65 years and raised 8 children, two of their sons followed Travis into fishing."

We've lifted Margie's recipe for stuffed sole. Here it is!

 

Stuff the sole with your choice of chopped, cooked spinach or brocoli or shrimp. Roll it into a ball with stuffing inside. Place in a small baking dish and cover with your favorite white or Be“chamel sauce. Bake until medium-rare. Let it rest for 3 minutes. Then serve.
Bechamel Sauce
 1 1⁄2 T. butter  

  1 1⁄2 T. flour  

1⁄4 onion minced   

1 1⁄4 c. milk peppercors thyme   

1 small bay leaf salt 

grated nutmeg


In the top of a double boiler, heat the butter until bubbly. Add the onion and let cook over very low heat for 3-4 minutes. Stir in the flour and continue cooking for a few minutes more. Pour the milk in a little bit at a time and stir it in with a whisk. The sauce will thicken. Add peppercorns, thyme and bay leaf. Sprinkle in some salt and nutmeg, let it cook for 10-15 minutes, then strain through a sieve.#
