AMPELOS CELLARS RECIPE
Ampelos Cellars in the Santa Rita Hills makes lovely wines and boy can they cook, as well. That figures - nice people, great wine and food.
For two people
- 1 rib eye steak
- 1 jar of roasted red peppers
- Arugula
- Bottle of gamma syrah or delta Grenache or any nice red wine
- Balsamic vinegar
1. Put the arugula on a medium size platter
2. Lay the red peppers on top of the arugula
3. Pan sear the rib eye for about 6-7 minutes on each side for medium
rare
4. Put the steak on a plate and cover it with foil to let it rest about
15 minutes
5. In the mean time, put about 2 cups of the red wine and a ¼ cup of
the balsamic vinegar in the pan used for searing the steak and let it boil
for about 15 minutes to create a reduced sauce.
6. Slice the rib eye steak into strips and place on top of the red
peppers and arugula. Pour some of the sauce over the meat and serving the
remaining on the side.
Serve with roasted potatoes and beets that have been
quartered and roasted with olive oil, onion, and salt & pepper to taste.
